Summer Grilling Recipes

It’s getting hot! Okay, well maybe not for those of us in Western Washington, but that doesn’t mean we can’t fire up the grill. Rain or shine, it’s officially BBQ season, and we have some pretty brilliant (and delicious) ideas on how to incorporate dairy into your summer grilling routine. Think big, juicy burgers, refreshing sides, and delectable desserts. It’s no wonder we love summer so much. Main Dish

Beef, fish, turkey, pork, and chicken. No matter which meat you favor, the grill has the ability to bring out the very best flavor in all of them. Add a dash of dairy and your taste buds will surely jump for joy!

Fish Tacos with Chipotle Cream

This is the perfect weeknight dinner dish. It’s light, but packs a powerful punch of flavor, leaving you satisfied but not stuffed. Use a white flaky fish like tilapia or halibut and opt for fresh limes and cilantro. The chipotle cream adds a cool kick to the mild fish taste. Dairy Ingredient: ½ cup plain nonfat yogurt.

Blazin’ Buttermilk Wings

If easy is your thing, you’ll flip for this wing recipe. With just 10 minutes of prep time (and an overnight marinade), these wings are ready to throw on the grill. Blazin’ buttermilk wings are delicious leftover and fit nicely in a bucket for a weekend camping trip, family picnic, or day out on the boat. Just don’t forget the wet wipes! Dairy Ingredient: 1 quart buttermilk.

The Farmer John Cheeseburger

We admit, this cheeseburger could probably qualify as overindulgent. But sometimes that’s necessary, and our friends at the Cheese & Burger Society insist that if you’re someone who ends the day with calloused hands and a sweaty brow, The Farmer John is meant for you. There’s no step-by-step recipe, but we can tell you that it’s a succulent beef patty, Limburger Cheese, bacon, and hashbrowns nestled between two slices of French Toast, garnished with onion rings and parsley. Sometimes too much of a good thing is just a really good thing. Dairy Ingredients: Limburger Cheese (but any kind will work!) and milk for the french toast slices.

Side Dish

Don’t get us wrong. We enjoy a fresh green salad or fruit salad as much as the next guy, but if the grill’s already going, you better believe we’re going to make the most of it! Mix things up with one of these summer cookout sides and salads.

We didn’t forget the salad. Really, you can use any vegetables that you like for this salad, but choosing local, in-season produce like zucchini adds to the summer effect. We like to pluck ours from the garden right before dinner along with a few sprigs of fresh mint. Dairy Ingredient: feta cheese.

Saving the best for last: dessert! Summer dessert should be simple, light, and fruity. And when in doubt, just add a scoop of ice cream! Or maybe two?
